vanilla bean | 1 |
sugar | 1/2 cup, plus 3 tablespoons |
ground cinnamon | 2 tablespoons |
stick butter | 1 |

all-purpose flour | 1 cup |

Step 1: Cut open the vanilla bean and using the back of the knife, scrape the seeds of the vanilla beans into a small bowl
Step 2: Combine 1/2 cup of sugar and cinnamon and start stirring. Then set it aside
Step 3: Then using a medium saucepan, add butter, salt, 3 tablespoons of sugar, and water over medium heat until it begans to boil
Step 4: After, bring the pan off the heat and add in the flour
Step 5: Place the pan back onto the heat and continue to stir for about 3-5 minutes until the mixture forms a ball
Step 6: Move the flour mixture into a medium bowl. Then use an electric hand mixer on low speed and add the eggs one at a time, making sure that each egg is completely mixed in before adding the next one. Continue until the texture is smooth
Step 7: If you are not going to fry the mixture immediately, cover it with a plastic wrap and place it into the refrigerator. If not, pour adequate amount of oil into a large frying pan that has a depth of 2 inches
Step 8: Heat the oil using medium heat until it is 375 degrees F
Step 9: Use a small ice-cream scooper or 2 small spoons and carefully place about a tablespoon of dough into the hot olvie oil and fry in batches
Step 10: Flip the zeppole once or twice and cook for about 5 minutes until it becomes a golden color and puffed up
Step 11: Drain the zeppoles using paper towels and add cinnamon sugar. Serve immediately
