Homemade Cannoli

all-purpose flour 2 cup
granulated sugar 1 tablespoons
kosher salt 1/4 teaspoon
unsalted butter, cut into small pieces 1 tablespoon
egg yolk 1
dry white wine 1/2 cup
ricotta cheese 2 cups
powdered sugar 3/4 cup
ground cinnamon 1 teaspoon
allspice 1/4 teaspoon
heavy cream 1/4 cup
small semisweet chocolate chips 1/4 cup
lemon 1
canola oil 1 quart
flour
egg 1
powdered sugar

Step 1: Mix the flour, sugar, and salt into a medium bowl. Mix the butter pieces into the flour using your fingers until the texture becomes rough and sandy

Step 2: Add the egg yolk and white wine and mix until the texture of the dough becomes smooth. then spread a piece of plastic wrap on a flat surface and position the dough onto the center of the wrap

Step 3: Wrap the wrap gently around the dough and place it into the fridge for a few minutes while you make the filling

Step 4: Place the ricotta and add powdered sugar, cinnamon, and allspice into a medium bowl and mix well

Step 5: In a different bowl, place the heavy cream until it is relatively stiff and use a rubber spatula to fold the cream over and into the ricotta mixture. While doing so, add in some chocolate chips and refrigerate for 30-60 minutes

Step 6: When rolling and frying the shells, heat the canola oil ot 360 degrees F in a medium pot

Step 7: While heating, sift an even layer of flour onto the flat surface and flour a rolling pin. Then roll the dough until it is 1/8-inch thick.

Step 8: Cut the dough into quarters and get any small or glass bowl with a 3-4-inch diamter

Step 9: Then cut it into circles and wrap each circle with a cannoli mold. Use a bit of the egg wash on the edge of each mold to ensure it will be sealed shut

Step 10: Start frying and submerge the shell until it is crispy, usually taking about 2-3 minutes

Step 11: Remove the oil and slide off the mold and set it aside to cool. Repeat the same procedures with all the other circles

Step 12: Before you serve, fill the cannoli shells from both sides with the filling and top it off with powdered sugar and it is best to serve immediately
